I don't know about you but for me lunches get difficult and boring. I try to make the cheapest yet healthiest lunches I can for the girls. We often end up having the same thing day after day after day. It gets really boring. They also stop eating once they've had the same thing 5 days in a row. Also, when we get to the last week of the grocery month lunches get pretty interesting. I'm always out of something making it alittle more difficult to have a good lunch.
So yesterday I searched the cabinets and came up with my own Cheesy Tuna Casserole. It's super easy. You probably already have all of it in your cabinets, freezer, and fridge.
Cheesy Tuna Casserole
1 box of Mac & Cheese
1 can of Tuna
Some frozen peas (you could probably use broccoli or green beans if you don't have peas)
Some Parmesan Cheese
1-2 Slices American Cheese
Milk and Butter per the Mac & Cheese recipe on the box. (I added alittle extra milk because I added the american and parmesan cheese)
Make the Mac & Cheese to the box directions. Add about 1/4 cup parmesan cheese and 1-2 american cheese slices. I added alittle extra milk until it looked creamy. Add in the peas(broccoli or green beans) still frozen and the tuna. Place it on the stove until the peas are done.
My girls really liked it. They both ate a bunch. I tasted it. I like it too. I was planning to eat a bowl of it until I dropped it on the floor while going to put Hayleigh back in her bed at naptime.

I don't often mix in veggies (just serve on the side) but this is one of my kids favorite lunches! I've neverused the parm cheese I just use extra American. Guess I'll have to try that next time!
